Huckleberry Finn Project. Help?

I have a English project due Thursday and we just finished reading Huck Finn and I have to do a project where it asks if Jim is the central character in the book and then it says to find evidence in the book to support this. Then I have to rewrite a scene in the novel using Jim's point of view. So what would be a good scene to rewrite in Jim's point of view? And what evidence is there to support that Jim is the central character? Thanks
